Avocado, walnut and pear salad – low GL




  • 1 bunch watercress
  • 2 avocadoes
  • 2 firm ripe pears
  • Juice of half a lemon
  • 50g/2oz walnuts
  • 2 Tbs olive oil
  • Pepper and sea saltMethod:
  1. Wash, dry and trim the watercress; arrange it on a large plate
  2. On top put alternate slices of avocado and pear
  3. Sprinkle on a little lemon juice to keep the colour fresh
  4. Scatter the walnuts on top
  5. Mix the oil with the rest of the lemon juice and seasoning and pour over
