Ingredients:
- 1 bunch watercress
- 2 avocadoes
- 2 firm ripe pears
- Juice of half a lemon
- 50g/2oz walnuts
- 2 Tbs olive oil
- Pepper and sea saltMethod:
- Wash, dry and trim the watercress; arrange it on a large plate
- On top put alternate slices of avocado and pear
- Sprinkle on a little lemon juice to keep the colour fresh
- Scatter the walnuts on top
- Mix the oil with the rest of the lemon juice and seasoning and pour over
