ROASTED APPLES WITH OATS AND BLUEBERRIES
4 brambley apples
25g pecan nuts
3tbsp browbn sugar
4 tbsp orange juice
Preheat the oven to 200ºC. Core the apples and wash well, then use a sharp knive to score around the middle of each – this will stop the apple from collapsing. Place the apples in a roasting tin. Chop the nuts and mix with the oats, blueberries and sugar. Mix together and spoon into the apples, pour over the orange juice and cook for 30 minutes or until the apples are soft.
