Salmon Fishcakes (Serves 6)
400g Salmon, poached Fish Cakes=385Kcal each 500g Potatoes Grated rind and juice of 1 lemon 1 tbsp olive oil 1 Scallions, chopped 1 leek chopped 1 tsp chili pepper 2 Cloves of garlic, chopped, 2 red chilies chopped, 1 Bunch coriander chopped 100g breadcrumbs
Method: Steam the fish, boil the potatoes. Sautee the leek, scallions, garlic and chillis. Mash the potatoes, flake the salmon and add the rest of the ingredients except the breadcrumbs. Season and make into 6 cakes. Coat in bread crumbs and bake for about 20 minutes 180C. Serve with a green salad
