Gluten free granola

Homemade Gluten Free Granola

 200 grams of millet flakes or quinoa (or both)

50 grams desiccated coconut

50 grams each chopped pecans / almonds / brazil nuts

4 – 6 heaped tablespoons pumpkin seeds and sunflower seeds

1 teaspoon ground cinnamon

4 – 6 tablespoons of maple syrup / agaves / molasses (very strong flavour) / rice syrup barley malt / unrefined brown sugar

100 gram mixture of dried cranberries, apple, figs, blueberries, sour cherries, apricots or mango. (choose 3).

Mix all above together in a large bowl. Spread out on a large tray and place in oven at 140 C for 40 minutes – 1 hour, stirring 1 – 2 times during toasting process.  Remove from oven and allow to cool.

  1. At end – add dried or fresh fruit of choice ( dried bananas apricots, figs, prunes, apple, pineapple etc)
  2. Fresh fruit, banana, mango, apple, blueberries, strawberries, other berries…..Serve with natural yoghurt for breakfast, use as a crumble on top of fresh fruit, make into healthy granola bars.
