Eggs Benedict – great protein source
Ingredients:
• 4 large Portobello mushrooms
• 2 tbsp of sherry vinegar
• Salt and pepper
• 2 ripe avocados, mashed
• 1 tbsp of tamari
• 1 tsp of olive oil
• Few shakes of Tabasco
• Toasted sesame seeds
• 4 eggs
Peel the mushrooms but leave them whole. Put them in a roasting tray, sprinkle with sherry vinegar and season. Roast for 15-20 mins, until soft and juicy.
Mix the mashed avocado with the tamari, olive oil and tabasco and set aside.
Poach your eggs for about 1 ½ to 2 mins.
Top the warm mushroom with the avocado cream, add poached egg and some seasoning and toasted sesame seeds.
