Flax and Coconut Bread
– 2 tbsp Chia seeds
– 1/2 tsp Baking soda (Bicarbonate of soda)
– 1/2 tsp Rock Salt, pink
– 1 cup desiccated Coconut
– 3/4 cup Milled Flax seed
– 3/4 tsp Cream of tartar
– 3 Eggs
– 2 tbsp Olive oil, mild
– 1/4 cup warm Water
– 1 tsp black strap Molasses
Cooking Instructions: Serves 3-4, 1. Preheat oven to 180C/350F. 2. Mix all dry ingredients together and stir well. 3. In a different bowl, combine eggs and olive oil. Dissolve molasses in the warm water and mix with the other wet ingredients. 4. Stir wet ingredients into dry and allow batter to sit for 1-2 minutes to thicken. 5. Put the dough into a small bread tin and bake for 25-30 minutes until the bread is firm and well cooked.
